Ingredients

  • A mix of veg – carrots, cucumbers, red onions, radishes or even cauliflower.
  • 200ml vinegar (white wine, apple cider or rice vinegar)
  • 200ml water
  • 2 tbsp sugar
  • 1 tbsp salt
  • Optional: peppercorns, mustard seeds, garlic or dill for extra flair

Method

How To Do It:

  1. Slice your veg thinly – use a peeler or mandoline if you’ve got one.
  2. In a small pan, bring vinegar, water, sugar and salt to a gentle simmer until dissolved.
  3. Pack your veg into clean jars and pour the hot brine over.
  4. Let cool, pop on the lid and chill for at least 30 minutes (though overnight = even better).
